I made this the other night and it totally blew me away!  I had no idea it would be so good!  So I had to quickly share this recipe so I myself won’t forget it!

 

The biggest bonus to this recipe is that my 18 month old loved it.  Anytime kids eat veggies it’s a win!  And for a dip, I used homemade ranch dressing which just made this even more amazing…and healthy!  No yucky stuff in this yummy veggie side dish/appetizer!  And it’s also grain-free so it’s GAPS legal…now if someone would get my 3 year old son to eat them.  That’s a whole different challenge.  But oh well…they are amazing and hopefully one day he’ll come around too!

Ingredients
  1. 2-4 zucchini cut into wedges
  2. 1-2 eggs whisked for egg bath
  3. 1 cup ground almond meal or flour
  4. 1 cup grated parmesan cheese
  5. 1 tsp oregano
  6. 1/2 tsp thyme
  7. 1/2 tsp herbs de provence
  8. sprinkle of salt
  9. sprinkle of garlic salt
  10. 1/4 tsp ground pepper
  11. 1/4 tsp onion powder
Instructions
  1. Mix the dry ingredients together with a whisk until well combined, including the cheese. Dip the zucchini in the egg bath on all sides, then dip into the dry ingredient mixture and roll until covered. Place on a drying rack over a baking sheet for baking. Bake for 15 minutes at 350 and then broil for about 5 minutes so they can crisp up a bit! Enjoy!
